Notes

Heat 3 gallons in pot to 162. Add grains, this should drop to 152. Let steep/mash for 60 minutes. We are seeking conversion here so maintain 152 as best as possible. Wrap kettle in towels, blankets, etc. Or transfer mash water to smaller cooler that has been pre warmed with hot water and mash in the cooler. After 60 minutes, bring wort to 150 and turn off heat, add DME, turn on heat and bring to boil. Watch for boil over and once hot break disapates, add hops and boil for 60 minutes. With 15 minutes to go add wort chiller to sanitize. when time is up, cool to 62F and pitch yeast.
