The hops are 7%AA, so drop the 60 minute hops to 12 grams. Go ahead and put the rest of 1 ounce in at 15, which will put IBU a little higher than typical, but still within style. Might be kinda nice. |

Finally reduced sparge water from 18 to 16 quarts after looking at the same damn note for years and then came up short on kettle volume! Maybe 18/17 is the right number. Geez. Most brewed recipe and still can't nail it.
7.2 * 37 = 266.4 / 5.2 = 1051 if volume lands at 5.2 gallons. That would be on the high side. So, if I put some water in to get 7.4 gallons (7.5 marked on kettle), that would be 1036, which would land at 1048, that would be better; let's do that. Re-check and make a new log entry.

Yeast pitched and in ferment chamber at about 3:15pm.
Pleased to have hit all the numbers, thought I missed the gravity low and volume high, but it was spot on.
Temp controller is set at 65, currently reading 68 |

Moved to keg last night. Put a bit of CO2 on it. Will let sit until Saturday to carb with the other two at the same time.
This tastes right to me. Very clean. Low esters. |

Around 5:30, turned the pressure down, bled it off, tapped a small sample, still way under carbonated. Turned it back up. Let it sit until morning. |

Seems ok. My taste buds are fucked up I think right now. There's a harsh bitterness in the after taste on this too (same with APT). I think it's me.
Guessing this one scores mid/high 30s .. outside chance, but not likely at NHC (probably would do fine in smaller "large" contest). |
