God knows whats going on here, still too liquid going through the system, I have now dialed back the 2.5 lts lost to the kettle and I have altered the malt absorption ratio to 1.38 instead of 1.15
Apart from too much wort and 2° of gravity missed a very smooth brew night |

Well a sample indicates primary fermentation is over so I have now dry hopped this with approx 30g of Centennial pellets.
I have also raised the temperature on the fermenting fridge to 21°C to give the beer a few days diactyl rest. Infant I may even leave it as this temp for a couple of weeks for the pellets to take hold.
I will then crash cool the beer down to 5°C and leave until a week before the wedding whereby I will fill a corny keg ready for dispense. |

I've just realised today that I have put the wrong hops in this for dry hopping.
The clues in the name :-(
I've added 30g of Centennial and it should have been something like 100g of Columbus..... |

This went down better than expected, I really wasnt impressed. Very bland and not much to it. I'd like to use this yeast again but make a 'proper' Pilsner with some noble hops etc. |
