1 vial WLP-004 into about 0.8L of wort. Wort was boiled 15 minutes from 32oz of water and 1 cup DME. |

Tasted the beer today before it carbonates. Has a really nice flavor, but it's VERY dry for the style. I attribute this to the low mash temp, and it will be interesting to see what the final product is like. Going to try some chilled. |

Tried a bottle tonight. Definitely still dry, but tastes nicer with the carbonation it's picked up in the bottle. Toasted malt flavor comes through nicely, there's a little fruity flavor in there but I don't think it's contamination. Not as much carbonation as I'd like on this sample, but perhaps it will carbonate more. Cinnamon flavor didn't come through - next time I need to put it in earlier in the boil, since it came through strong while cleaning the kettle after brewing. 4 sticks is probably plenty. |

After a year in the bottle this stuff tastes slightly better, but was still obviously mashed too cold. |
