Kept this in fermenter for 2 more weeks after this date before bottling. Never rechecked gravity at bottling time. |

A lot of hop trub from dry hopping. My last bottle was almost half full of it--Yum! We'll see...
The aroma from the bottling bucket was pineapple and citrus

I like this beer, but would make some changes. It needs to be hoppier. I think the zythos hops are great for flavor, but are mostly fruity/citrusy, and I would like a little more pine tree. Next time I will try bittering with something like magnum, and adding some simcoe or chinook along with the zythos later in the boil. Also, the beer is a little sweet, so next time I will try cutting crystal in half and maybe even doubling the cane sugar to dry it out a little more.
Overall, this beer is quite nice. Light, fruity, and easy to drink despite being over 7%. I would like a bit more bitter, and hop aroma, though. This, to me, is like an extra hoppy pale ale, but not quite up to my IPA standards. Good beer, but needs some improvements. |
