Quick Water Requirements
Water Gallons  Quarts
WARNING: Boil kettle capacity (12 gal | 48 qt) exceeded. Volume required: 13.76 gal (55.05 qt). Suggest reducing initial water volume to 12 gal (48 qt) and adding 1.76 gal (7.05 qt) sparge/top-off.
WARNING: Mash tun capacity exceeded. Volume required: 14.81 gal (59.24 qt). Suggest reducing initial water volume to 11.4 gal (45.6 qt) and adding 2.81 gal (11.24 qt) sparge/top-off. 14.21 56.8
Heat water added to kettle (equipment estimates 13.47 g | 53.9 qt) 14.21 56.8
Mash volume with grains (equipment estimates 13.47 g | 53.9 qt) 14.81 59.2
Grain absorption losses (steeping) -0.94 -3.8
Mash Lauter Tun losses -0.25 -1
Volume increase from sugar/extract (early additions) 1.23 4.9
Pre boil volume (equipment estimates 13.76 g | 55.1 qt) 14.5 58
Boil off losses -1.5 -6
Hops absorption losses (first wort, boil, aroma) -0.26 -1.1
Post boil volume 12 48
Going into fermentor 12 48
WARNING: Kettle losses > 2% detected which throw off OG calculation for extract/partial mash recipes in batch target 'fermentor' mode. Solution: Reduce kettle losses, misc losses and hops absorption in equipment profile, OR set batch target to 'kettle' and do a full wort boil. See batch target FAQ.

Notes

because it has the Vienna I mashed for an hour instead of steeping, this popped the top of my carboys, had to clean the hoses twice and had a 5 inch krausen ring around the top. I let it age in the 36 range in my conditioning kegs for 7 days after a 10 day fermentation, pulled off into a serving keg and taste notes: a very roasted flavor with high alcohol back end, the hops disappeared as expected but balanced the sweetness perfect with this yeast! carbonation can be lowered to keep the bite away, nice smooth sipper on a cold winter night.
I fermented down to 12 so a 7.88 on the alcohol

This is a winner!

notes: use 90 instead of 120 or less 120 for less of a roasted flavor if needed

you will need 2 yeasts for a 5 gallon container so 4 for this batch even with a starter, I made a 2000ml starter over night and put 4 inches of foam on top of each carboy
