Served at 8 deg C (46 deg F) to a tulip glass.
A - Dark transparent amber liquid. 1 inch foamy head. Pronounced lacing. 1 cm constant retention. Bubbling continuously.
S - Brown sugar, malt, yeast, and bread aroma, very much a Belgium beer. A noticeable alcohol hint esp. at high temperature
T - The first taste is brown sugar, figs, and pears. Overall yeasty, malty. Light herb and hop aroma follows. Citrous hint is noticeable at last, even after the hop reflux, distracting but only disturbing at high temperature. All tastes are wrapped by a impressive sweet, smooth, and tensive charred wood flavor. A bit of glucose sweetness, more when temperature raised. Rich and solid.
B - Mid to full body, smooth but vigorous. Chewy. Drinkability is high despite the pronounced carbonation, along with the pepper tone from T-58 yeast. Alcohol is very pronounced at previous days (early Dec., not logged), but diminished here. Warmth preserves. Moderate to dry.
O - Very complex and full, probably the best beer I've brewed. Yet it is still young and have rooms for improvement, especially on the alcohol hint. Clean beer.
It's very much like Achel 8 bruin, the only thing different being the hop aroma.
Recommended serving temperature: 12~14 deg C

This beer has a way to high fusel alcohol flavor, so cut the amount of candi sugar if you want to brew it. |
