A tricky one indeed. Good old Mr T didnt say anything about the gelatinous lump at the bottom of the mash tun casuing the biggest stuck mash Ive ever had! No biggie. I got the gravity I was after after a bit of poking around in the mas tun to loosen everything. A mixture of batch sparging and fly sparging sorted it. Lets see how this one turns out! |

This has been at a steady 1.007° for about 3-4 days now. Saying this I dont detect much tartness in the beer. It tastes amazing, slightly lemonesque but not much sourness there. I am going to leave it for about a month to see if the Lacto has taken more of a hold. No rush with this one, but next time I am using fresh live starters of microbes. |

Still tasting good. Grainy and bready. I looked at a sample under the microscope and the lactics are definitely there they just need more time and more importantly some warmth! |

Hmmm I'm sure I can detect an off flavour/smell but I'm rubbish at identifying them.
Tonight I have added about 1-1.5lts of the sour starter I made in Demi john with a handful of grain.
Said starter has been re-fed with 1lt of apple juice and 1lt of fresh spray malt extract plus some yeast food. |

There is definitely some DMS or something giving a slight off smell but it is not present in the flavour.
I added 200g of boiled and cooled maltodextrin about 4-5 days ago and the beer is finally sour!!
Going to decide what to do with it next. I have a 1kg of blackberries to put some of it on, who nows what I might do with the rest. |

x10 330ml bottles of dry hopped BW
x11 330ml bottles of lemon zest BW
Dry hopped one tastes amazing! I thought it would be well overdone, the bottle kept erupting all the time so I had to put it in the fridge.
Lemon Zest one has taken on a mineral type of quality, nice it kind of goes with the BW earthy taste. Watch this space. |

The x1 oak cube 4.5lts isnt much to write home about so I added a 5g hop tea bag from Boyes, Amarillo. Ill leave this for around a week and then maybe bottle. |

So thats it. The last of this was bottled today. Both the Blackberry and oak/dry hop version I squeezed into some 330ml bottles. Only got 9 of the Blackberry one which is such a shame because it tasted amazing. Dry, Sour and fruity. I need to do a large batch of this next year, more Blackberry picking too!
The oak/DH version was a bit sick smelling! Oh dear. Well like the plain version we'll see if time does it any justice in bottle.

I tried the Lemon Zest version again last night, I'm not sure whats happened to the yeast and sugar I added to the bottles but it is seriously lacking in condition. The good news is that it tastes pretty alright. Not as good as the blackberry one or the dry hopped one but it drinkable. Michael Tonsmeire knows his stuff from experience as he says in his book that Lemon Zest turns into a mineral type of taste after a while. Its not a bad thing just don't expect the zing of a fresh lemon! |

I took x2 330ml bottles of the Cascade dry hopped version to the home brew meeting I organised.
All thoroughly enjoyed it! I didn't think it would be everyone's cup of tea but everyone enjoyed it, even those who though it wasn't a beer! |

I drank the last Cascade dry hopped one of these on Xmas day before dinner, a sad moment indeed. I have quite a few 300ml ones left of the plain version but the DMS is not going away. I think I may ditch these ones and try again. |

I had one of these last night. DMS pretty much gone now leaving behind a nice blank canvas of a Berliner Weisse.
Very carbonated so the Brett is definitely working/worked in the bottle.
Look out for Berliner Weisse #3!! |
