Notes

Full volume, no sparge mash

Double decoction: 1st decoction after 15 min at 148F rest, boil x 20 minutes. 2nd decoction at beginning of 158F rest, boil x 20 minutes

Hops loose in kettle

Drain wort into FV and then attach to FTC - chill to 50F (HEPA filter in blow off stopper)

Pitch at 50F and ferment at 50F x 7 days, then raise to 55F x 2-3 days, then raise to 60F x until final gravity days.

At stable terminal gravity, cold crash x 7 days, then gelatin fine x 3 days. 5 mL Biofine in the keg. Pull pint after 7 days.

Lager for 4 weeks
