Notes

Brewing Instructions:
Mash:
Heat 18.5 L (4.9 gallons) of water to 70°C (158°F).
Mash the grain bill at 66°C (151°F) for 60 minutes.
After 60 minutes, raise the mash to 76°C (169°F) for mash-out to stop enzymatic activity.
Sparge with water at 75°C (167°F) to collect enough wort for your boil (around 26-28 L).
Boil:
Bring the wort to a boil, and once boiling, add the Target hops for bittering. Boil for 60 minutes.
At flameout (10 minutes before the boil finishes), add the First Gold and East Kent Goldings hops for whirlpooling. Stir gently and let them steep for 10 minutes.
Cool Down:
After the whirlpool, cool the wort down quickly to around 18°C (64°F).
Fermentation:
Transfer the cooled wort to the fermenter.
Pitch the yeast and ferment at 18-20°C (64-68°F) for 7-10 days, or until fermentation is complete.
Dry Hopping:
After primary fermentation, add the dry hops (First Gold and East Kent Goldings) and let them steep for 5 days at fermentation temperature.
Carbonation:
Once fermentation and dry hopping are complete, carbonate to your desired level (around 2.5-2.8 volumes of CO2).
Bottling and Aging:
Bottle or keg your beer and allow it to condition for at least 2 weeks. The beer will develop a fuller aroma and flavor with time.
Tasting Notes:
Appearance: Golden, hazy, with a frothy white head.
Aroma: Expect a complex blend of spicy, herbal, and slightly fruity aromas. The East Kent Goldings bring a floral, mild earthy note, while First Gold offers a fruity, slightly spicy aroma, complementing the more traditional hop flavors.
Flavor: A juicy, malty body with subtle tropical fruit character (like peach, apricot, and orange), balanced by the earthy and herbal notes from First Gold and East Kent Goldings.
Mouthfeel: Medium body with a smooth, soft mouthfeel from the wheat malt. Hazy, with a nice juicy texture.
