Notes

A los 10 minutos de macerado. Ph 5.40. Se agregan 3 gramos más de ácido. Quedó en 5.38

Agua de empaste a 72. Temperatura macerado quedó muy alta a 67,5. Buscábamos 64.

Dejo de funcionar bomba 1. Viene Marcos al rescate.
Vino Marcos arregló todo. Un capo.

Recirculamos y la temp bajó a 63,5. Quizás tendríamos q haber medido la temperatura de macerado con un termometro externo para estar seguros

Recirculamos media hora y nunca clarifico. Se armaron canales. rompimos toda la cama y volvimos a recircular mucho más despacio y funcionó.

Densidad de macerado, 1068 aprox.

Densidad pre boíl 1078. Ph 5,3

2 horas de lavado. Densidad last run 1009. Ph 5,8
