16.2 brix OG.
5.2 post boil ph.
Fermentation took off right away.
Airlock smells great.
8.4 brix FG. 1.014. 6.55% abv.
I pulled the beer off the yeast at 1.014 which I've never done before and it was big mistake. This is too sweet. I would have finished around 1.006 if I had let it ferment out. This would have made it more bitter. It is sticky after drinking it with some noticeable chocolate flavors. Otherwise pretty good recipe. The Blackrye 2 was way better though. This could have used the extra dry hop addition for 2-3 more days. Sent this to the IBU open comp 2024.
