Appearance: Still relatively cloudy, dark yellow/gold color. White, persistent head with lots of lacing.
Aroma: Still somewhat yeasty. Very floral, honey?
Flavor: yeasty, carbonic acid bite, floral, red fruit, rich bready malt
Hopefully as yeast fully drops out the flavors will focus. Floral notes are almost too strong at the moment.

Appearance: Slowly clearing. Decent clarity for standard ale, not quite there for Kolsch. Believe this is primarily chill haze. Persistent thick white head with immense lacing. Between gold and pale ale. Color seems perfect.
Aroma: Fruit forward, subtle grape and apple notes. Floral Overall clean, touch of sulfur accounting for grape?
Flavor: Red apple, clean malt similar to honey and graham crackers. Spicy and floral finish.
Mouthfeel: Smooth, filling but not cloyingly so. A beer with depth that you still want another pint of when you're finished
Overall impressions: A very complex, yet drinkable beer. Exactly what I want from a kolsch.
Goals w/ V2: Crisper finish, faster time to clarity.
Planned Revisions: Remove Carabody malt. Increase IBU to 28 with more late hopping. Do planned water profile, keep so4 at 70ppm, move cl to 50ppm, reduce na as much as possible. Target boil pH of 5.0. Use "clarity ferm" type enzyme to diminish chill haze. Move to 90 minute boil? |
