Just starting to get carbed. Very hazy and yeasty. Pleasant, crisp mouthfeel even with all the yeast in suspension. Floral and red apple aroma. Hard to judge mouthfeel due to yeast and haze. Clean malty grain character. |

Appearance: Excellent head retention and lacing, white, fluffy head with small bubbles
Aroma: clean, Pear, floral
Taste: Clean. carbonic bite, malt, floral, spice,
Mouthfeel: light, easy to drink, prickly carbonation
Overall impression: Good Kolsch, changes from last batch were improvements. Would consider fermenting at slightly higher temperature next batch. KO @ 63, maintain at 64/65 for 80% of gravity drop, free rise to 68/70 |

Beer is tart but pH is only 4.0. This must be the K-97 tartness that I hear about. As beer has clarified ester profile has focused. More of a berry/apple character rather than the usual floral character. Clarity is brite. Beer is very drinkable but the tart and lack of floral character is not perfect. I believe this is fermentation temperature being too low. |
