Mashing process: Pour the malt into 68°C water for 60 minutes to extract more sweetness.
Wort boiling: Filter and boil for 60 minutes after mashing. Add Citra hops and boil for 60 minutes to get bitterness. The remaining Cascade and Centennial hops are added later to enhance aroma and flavor.
Cooling: Cool the boiled wort to 20°C and transfer to the fermentation barrel.
Fermentation: Add yeast and keep the temperature at 18-20°C. Ferment for 1-2 weeks until fully fermented.
Add cold brew coffee: Cold brew coffee is extracted in the refrigerator for at least 12 hours, then filtered and carefully added to the fermented beer.
Bottling or kegging: After the cold brew coffee is added, the beer is left to stand for 1-2 days to mix the flavors. Then bottle or keg it, add appropriate amount of sugar for secondary fermentation or add CO₂.

Color: Transparent gold with a slight amber tint
Aroma: Coffee aroma interwoven with light citrus and floral notes
Taste: Smooth and layered, with the slight bitterness of coffee balanced by the sweetness of malt
Flavor: Refreshing malt base with mild coffee flavor
Tips
If you want a stronger coffee flavor, increase the amount of cold brew coffee or shorten the fermentation time to retain more coffee aroma.
