Notes

Fermentação ALE - IRA

Fermentar em baixa/média temperatura controla a produção de ésteres mas resulta em notas cítricas e tropicais. (18º à 24º).
Geralmente a IRA é feita entre 12º e 16º para uma finalização mais limpa.
Ao terminar a fermentação, não se pode baixar a temperatura rápida e bruscamente. Baixar para 10ºC por 3 dias, depois para 8ºC por 3 dias e depois baixar para 2ºC mais 5 dias.
