Preparation

Water Profile Adjustments:
For every 10 liters of water:
Gypsum (Calcium Sulfate): 1.22 grams
Calcium Chloride: 0.39 grams
Epsom Salt (Magnesium Sulfate): 0.38 grams
Baking Soda (Sodium Bicarbonate): 0.74 grams
Adjust water to target profile before heating.
Mashing

Heat Strike Water:

Heat 12 liters of water to 72°C.
Mash-In:

Add crushed grains (3.6 kg Pale Ale Malt, 0.41 kg Munich II Malt, 0.21 kg CaraMunich Type II) to the water.
Aim for a mash temperature of 65°C.
Mash Duration:

Hold mash at 65°C for 60 minutes.
Mash-Out:

Raise temperature to 75°C and hold for 10 minutes.
Sparging:

Sparge with additional water to collect 15.75 liters of wort.
Boiling

Bring to Boil:

Bring the wort to a vigorous boil.
Hop Additions:

60 minutes: Add 10.6 g Magnum Hops.
Continuous Hopping: Add equal portions of Simcoe Cryo and Cascade hops every minute from 60 to 0 minutes.
Total continuous hopping: 25 g Simcoe Cryo, 25 g Cascade.
Boil Duration:

Maintain a rolling boil for 60 minutes.
Cooling and Fermentation

Cool Wort:

Cool the wort rapidly to 18°C using an immersion chiller or other cooling method.
Transfer to Fermenter:

Transfer cooled wort to the fermenter.
Pitch Yeast:

Rehydrate and pitch LALBREW VERDANT IPA™ – ALE YEAST (1 pack).
Fermentation:

Ferment at 18°C until final gravity is reached (approximately 1.015).
Dry Hopping

Dry Hop:
After primary fermentation is complete, add 12.5 g Simcoe Cryo and 12.5 g Cascade hops.
Dry hop for 7 days.
Bottling/Kegging

Prepare for Packaging:

After dry hopping, cold crash if possible to clear the beer.
Transfer beer to bottling bucket or keg.
Carbonation:

Bottle or keg the beer and carbonate to approximately 2.5 volumes of CO2.
Final Steps

Condition:

Allow bottled beer to condition at room temperature for 2-3 weeks.
If kegging, force carbonate and condition for at least 1 week.
