Notes

VERY dry upon finishing primary, spice somewhat overpowering. Improved with back sweetening and aging at least 2-3 months. Future batches will steep spices for 3-5 days in primary before removing and finishing fermentation. Will continue to backsweeten to highlight peach flavors OR increase peaches by 1-2 lbs.
