Racked into a 3 and 1 gallon carboy. Treatment as follows for each
3 Gallon - Fortify: Adding 16oz whiskey addition (50% abv), 36 oz apple/cherry juice concentrate, and 6 oz lemon juice. Resulting in: 3 gallons, 16% abv, and calculated FG of 1.04. Cold crashed until clear before bottling.
1 Gallon - Fortify and sweeten: abv 15% FG 1.05-1.06 (approx.). This is 50% honey per the style. |

3 gallon (Apple Trójniak/strong cyser) : transfer to bottle bucket over: Campden tabs (3), ascorbic acid (1/4 tsp), and 1.5 tsp sorbate.
Bottling with #9 corks
