Notes

1.Mash at 69C-70C, important to have FG Rye malt

2.After boiling need to chill down wort to 80C for hops stand addition Add late hops and WP for 20min

3.First hops addition at 6-7P during of active fermentaion. Once gravity reached terminal drop Sv to 10C , remove all solids and dry hop again with terminal gravity hops. !!Note!! we use Hop Haze product from Baarth Haas to ensure the durable and consistant haze, added into the brite , reach out head brewer for the details.
4.Dry hop duration (after soft crash to 10C) 3 days . Each day, ideally rouse with CO2 2-3times in a day.Then cold crash to 0C to remove all the solids
