Odd. I mashed with 3.5 gal. then drained while adding 200F to sparge. Probably another 3 Gal here. and then threw a bit more (1 gal) towards the end of that.... Brix was hitting 3 very early on (while emptying the tun initially. |

Efficiency a little low. 64%. Will need to learn my efficiency more before changing the recipe I think. Although, It is targeted at 4% nearly, which is too high in alcohol anyway. |

Brix 9. Notty rehydrating for full hour. Or more waiting for wort to cool down from 80. Oops. Pitched around 76... Wine above it is 70. Yeast were rehydrating for like 3 hours. Wanted to just get it in there. In the future Will be using starters anyways. But also will consider to make sure I'm stirring while it chills (Sort of neglected this and took a dip in the pool at this time) Also decided efficiency loss probably caused by the uncareful sparging. (dumping pitchers) |

Impressively clear after such a short time. Put in keg and will secondary in keg for awhile. Week?
Taste is promising. Mild hops. Biscuit presence. Mild but not thin. |
