Notes

Hazelnut + Honey Amber Ale (scottish yeast):
Ingredients:
3.3 lbs Liquid Malt Extract (LME)
3.0 lbs Amber Dry Malt Extract (DME)
Steeping Grains:
0.75 lb C-60
0.50 lb Honey Malt (25°L)
0.50 lb Victory
2-3 AAUs of bittering hops
0.5oz 5% AA Cascade hops
2-3 AAUs of finishing hops
0.5oz 5% AA Cascade hops
1 packet of cold liquid yeast, Scottish
Bottiling:
4 oz hazelnut extract
4 oz sugar


Recipe:
Bring 3 gallons to boil (150℉ - 155℉)
Sanitize carboys
Gather ingredients
Once at temp (turn burner to low and leave pot uncovered)
Add grain bag containing the steeping grains
Steep for 20 minutes
Remove bag, let drain in pot, do not squeeze bag.
Whisk in malt extracts. Make sure it is completely dissolved before turning the burner back on.
Bring to boil
Watch for Hot Break
Add bittering hops (0.5 oz Cascade)
Boil for 50 minutes
Add finishing hops (0.5 oz Cascade)
After 60 minutes total, turn off flame
Immerse the brew pot in ice to cool. Rapidly cool to 65℉-75℉
Pour cooled wort in sterilized carboy
Add water to bring up to 5 gallons
Save sample of mixed wort to measure OG with hydrometer
Pitch yeast into the fermenter.
Cover with sanitized stopper and airlock
Store in environmental chamber at 68℉
Clean up
