Taste is not particularly overpowering as I anticipated. Aroma very strong, herbal, pleasant.

Note: Ended up with a headache for some reason after sampling 1/4 pint

Notes

2 Packs London 1028 with no starter, allowed smackpack to rev up for 2 days.

Roast Barley for 20 minutes at 350 F

Juniper berries - .5 OZ at 5 minutes

Did not treat water (going for a historically accurate adaptation, where the water you had available would have been what you used.)

Used well water from Tap, is quite hard
