Notes

Rack onto cherries after primary is completed. Use 50:50 mix of dark sweet and sour cherries, as many varieties as are available. After ~1 month (or longer if needed), rack onto one oak spiral that has been soaked in bourbon. Leave until flavors develop. Add additional bourbon to taste. Let mature and develop for several months (3-6 minimum).
