Notes

"White stout" recipe - derived from several reviewed recipes

Start 1 pint yeast starter in 2 Tblspoons of malt extract. Heat grains in about 1- 1.25 gallons of water to 120 degrees - 20 minutes, then to 155 F for 45 minutes Sparge. into pot with water up to 5 gallons - add bittering hops. 50 minutes in - add malt extract + Lactose and bring to a boil - go another 10 minutes. Add aroma hops - off heat. Wort chiller

Add to carboy. Add yeast starter.

During primary fermentation - soak cocoa nubs in just enough vodka to cover them - place aside. Coffee- used green beans (Burman ) - course grind - cold steep (room temperature) in spring water - 12 hours. Strain through cheesecloth (can store in fridge up to a week) and add at secondary w/ cocoa nubs and vodka mixture.
After fermentation is compete - rack to bottling vessel, adding 3/4 cup corn sugar dissolved in 3/4 cup of water (boil and cool) + vanilla extract. Bottle into 12 oz bottles
