Whoa, target ph way way off. Kinda believe since I have a new meter that passed cali
added 1 g of chalk to bring ph up to 5.2, didn't dare go any further. Delayed next temp by about 5 min as I adjusted. Will add dark malts at end of protein rest to allow ph to be closer to range longer :( |

Canned 5 for comps with 3.7 grams sugar targeting 2.8 volumes CO2
Left rest in keg, cannot brew next for 2 weeks so will leave on yeast then decide if/how to can the remaining |

Ok, disappointing. Little head retention - not sure how that works for a wheat beer. Malty aroma, almost Belgium dark sugar like. Banana and perhaps some bubblegum. Good firm carb (can cond). Dark malt almost sugary, banana some bubblegum taste. Prickly carb. Med dry with lingering yeast taste. This was a short can, so perhaps the low fill is playing into this.
Have an entry in Ocean State. At this point obvious fault and not an enjoyable beer, maybe time will be generous. |

Ok, it’s May and I forgot this was still in the guest room. Beer has improved with time, the head/foam has not. Less harsh, still good yeast profile. Just not my jam, but much improved. |
