First time using absorbic acid
Letting wort sit in kettle extra log time to allow maximum drop out prior to transfer to Flex
put Flex & yeast starter in fridge to normalize to 50F |

Third tasting - trying to get a better handle on diacetyl and when the yeast has cleaned it up
Getting a fullness and slickness along with a taste that I wouldn't describe as movie popcorn but I get where that descriptor is coming from. Thing is, I kinda like it which I think has been throwing me off - a complexity in the malt flavor and feel. Not crisp, No green apple or other potential off flavor detected. Will leave at ~65F until tasting shows improvement/change. |

Diacetyl still in aroma, but less than previous samples. Almost gone from taste - nearly there! A bit clearer but still hazy. |

Starting slow cool down > -3F per day for 10 days, then -5 per day to 35 |
