Notes

7.5 Gallons city water charcoal filtered, Campden treated, biab mash with 1 tsp pH 5.2 buffer at 157 to 154F 60 min, mashed out 165 F. Boil 60 min with DME, hop additions as noted, whirlfock and yeast energizer. Cool to 75F., Sg 1.062, yeast pitched (2.5 hr post smack). FERMENTATION TEMP 64F with Spike Flextemp coil, fermentation activity by the next am and more aggressive at temp 66-67F. Brew date 11/18/2023. 3 weeks in primary 65F- Finish OG 1.022 -bottle on 12/102023. AVB % 5.18
