Notes

Moderately high strength saison with a simple pils/wheat grist. Includes 0.5lbs DIY invert #2, which may or may not show up in the character of the beer. Table sugar included as well, boosting the simple sugar content to 10% of fermentables and an abv of 6%. 0.75 oz crushed home-grown coriander (toasted) added late in the boil.

Aiming for a refreshing, grainy saison, with the lemon-spice character of the BE-134 yeast accentuated slightly with EKG hops and coriander.

Brew day:

  • Acidified with 1.5ml lactic acid.
  • Est. mash pH = 5.45. Act. = 5.46. Added 1.4ml extra, for ~5.32pH.
  • OG = 5.63 gal @ 11.4 brix (1.046). ~79% eff.

    Kegging 21Nov2023:
  • FG = 1.002
  • Tastes good, but coriander not detectable.
