Seemed to hit above gravity and just slightly above volume of water. Hopefully getting the 3V dialed in. Need a counterflow chiller to speed up the cooling and be able to keep lid closed entirety of boil/cooling/transfer.
When cleaning the mash tun noticed there was I'd say a solid gallon of wort still left over. Need to figure out a dip tube to get to bottom or close to the bottom of the tun. Don't want to leave that much wort or that saturated of wort at the bottom. |

Diacetyl test past. Attenuation really poor. Wonder if it's a factor of the pale malt, pressure being possibly a little high early in the fermentation and just poor safale packs...? Taste seems fine and doesn't seem to sweet/malty. |

Beer never attenuated as expected. Maybe higher mash, more unfermentable malts but probably chalk it down to just underpitching US-05. Hoping to see if I can us 05 as a nice Ale yeast and the next beer which was lower OG pitched 4 packs. Time will tell.
It's been in the keg now for a solid week and it's really come together nicely. The malt bill I think is solid and don't know if I would change much. The hops balance well and if it attenuated I think the bitterness would be accentuated more. Maybe slightly more piney hops and a little more aroma but this is the best Red IPA or pale I've made. |
