Notes

Updating Red IPA Recipe. Using Munich II for some more maltiness/toastiness without too much sweetness. Slight addition of Carafa Special II to darken without adding additional sweetness.

Last years batch came out good but Safale-05 took forever to clear VDK and gravity finished high. Using WLP-001 as house Chico/American ale yeast. Will try to overbuild starter and even harvest some to keep on hand.

Going for more piney/resinous with a little citrus from the hop aroma and flavor to balance with maltiness and caramel flavors from grist. Chinook/Centennial/Simcoe with some Mckenzie in the dry hop.

ALDC at pitch and dry hop (warmer this time) then crash. Slight use of Lactic with DH to keep PH from creeping up.
