High finishing gravity, I suppose this is to be expected with the high mash temp and it would seem the SO4 doesnt like to drop below 1.011 or thereabouts. |

Hmmm too much bitterness at this stage and I think I've overdone it on the dark malts. Slight ashtray licking taste! Quite smokey without any smoked malts....lets give it some time in bottle. |

The smokey bitter aftertaste has calmed down a lot. Still not much sign of hop aroma. A good example of how NOT to do a hoppy dark beer. Very drinkable but not a repeat brew. I would change quite a bit in this to add some sweetness and maybe have another go at the hops. |

There are a few bottles of this left. Still very drinkable and it has been noted that the hops are there somewhere.
I will certainly learn from this one and never dry hop during fermentation in a dark beer again.
I think I have confirmed thought that I dont like SO4 yeast. I am finding after a few months that this beer is too clean and crisp. I prefer my dark beers with a little more dank and smoothness to them. I will try a less attenuative strain next time. |
