add 5 oz of lactose sugar with 10 minutes left in the boil.

Take 60oz of pumpkin cut into quarters, seed, place cut side down on a baking sheet lined with parchment paper. Bake at 375°F baked for an hour and then cool to 154 and put in the mash.
