Notes

Notes:

  • Not enough liquor added to boil pot, we should of targeted 63-65L but only got 58L due to miscalc. Post boil ended up around 42L when we should of got atleast 45L

  • PH was oddly really high, 5.8. Added 3 Grams of citric and then another 3 and it didn't budge. Added the Midnight wheat and it dropped to 5.6 but only after the mash was done. Our first brew on tank water with darker grains. I updated brew n water to hopefully match it for next time. Probably aim for target mash. Pickling lime appears to be stronger than expected.

    -Maybe try using a bigger bag when dry hopping, it will spread out on the bottom better and also maybe export more smell.

  • dry hops added at high krussen. Approx 2.5 days after pitch.

    First tasting: Very clean and malty. Not a lot of nose considering the dry hop. Nicely balanced with bitterness and sweatness.


  • Maybe drop the midnight wheat to 1.5% instead of 3%, the bitterness from the grain is a bit too strong.

  • Next time do two hop drops. One at high Krussen and then one at for the Dry. Use larger bags or multiple bags to get better spread.
