Notes

Great beer overall. first time using M31 and I will probably use it again, although it came out more "saison -ish" than expected. It is a beast attenuating. Fermented on the cold side it turned out great, with bubblegum and bananna notes. the coriander reminds behind, but perceptible. Quite balanced malty/hoppy, maybe a bit hoppier than the style requires, but great overall.

I splited batches and added homemade candy belgian sugar to get a 1% more ABV. I find no difference flavorewise compared with the regular one other than the alcohol boost.

Next time I will try a bit more caramel malts and a couple different hops ( styrian goldins and hallertau hersbrucker).

after 7 months aging in the bottle, it has gone waaay better. Much more balanced, everything is well integrated and both the saison-ish and banana esters have faded. Now, it has the typical flavour of a belgian beer. ( a good one)
