- OG was a little low but volume into fermenter was .75 gallons high, so that explains that. I made it a point not to boil so vigorously so that's probably why there's an extra .75 gallons.
- FOR THE LOVE OF GOD, REMEMBER TO BAG ORANGE PEEL WHEN PUTTING IT IN THE KETTLE!!! The ball valves, hoses and especially the pump got jammed up with orange peels.
- I forgot that Voss Kveik works better when pitched in smaller quantities so I reduced the pitch to only 5.5 grams. I probably could've gone even less but measuing half a sachet was easier. |

Tilt gravity has been holding steady between 1.006 and 1.007 so I took a proper hydrometer reading. Hydrometer showed 1.008 so we're at least in the same ballpark. Fermentation was very fast and vigorous and has been holding relatively steady for about 18 hours. I'll let it go for another day or so but fermentation appears to be more or less complete.
Taste is always a little sketchy at this time since yeast is very prominent, even after chilling it for a couple hours. That was true for this sample, though the yeast character wasn't as strongly prominent. The aroma is still very citrusy and orange. The taste is light, slight citrus, slight wheat. Once it's had time to condition I'm sure those notes will be stronger. Ultimately I think this will be a nice, refreshing, crushable summer beer and I can't wait til it's done. |

I'm calling fermentation complete. Gravity keeps bouncing between 1.007 and 1.008. I could probably let it sit longer and get another point or two out of it but there was a nice residual sweetness I noticed with the sample and I don't want to risk it drying out too much. I also need to have the fermenter free for this weekend so cold crashing starts now. |
