What's the F#£! is a Thiol?


This recipe uses three techniques that I have not used before. Two of which should increase the levels of free thiols in the final beer.

  • Mash Hopping - 74g of whole leaf Saaz hops are added to the mash. This level of hops should be in the "sweet" spot to release thios

  • IRC7 active yeast - Non-GM yeast with high level of beta-lysase (from IRC7 gene) and beta-glucosidase production.

  • Incognito – a flowable hops concentrate added at whirlpool (they were on offer and actually cheaper than actual hops!)
