-Started this the Sunday of the Super Bowl, apparently taking no notes.
-So, Andy's recollections a week later suggest we failed to do any Campden treatment of the water at all, just dumping honey (from CostCo, this time), water, a yeast starter, and the first bit of yeast nutrients together that day.
-Starter is because we did a different yeast this time around, something mead specific. |

- AGP: We almost certainly managed to double the concentrate in this and the kolsch. It's quite tart. |

- Having tasted this cold twice, now, Andy is _very_ happy with the end result, even if he's still convinced the concentrate was doubled. Not as easy drinking as previous batches, despite a lower ABV relative to the old 18% ones, it's tartness is plenty pleasant cold. It also has a somewhat thicker mouthfeel, doubtlessly due to the lower ABV, but also possibly from some of that tartness and other components from the concentrate.
- It would also be a good base for a _little_ bit of backsweetening, with the tartness there to balance it, to turn it into candy. |
