As you can see from the temp trace, it started out warmer than intended. I was checking the wort and yeast temps, but the GF reading got higher as the wort level went down???? What I thought was below 60F was warmer. By 7pm wort was down to 54F and the yeasties were going gang busters. Rather than keep chilling to 50-52a and slowing it down, elected to hold temp and put on a spunding valve set to 4 psi to keep the esters in check. |

Ok, been in the keg a while. Definitely diacetyl - get if off the keg plus did a warmed d test. 3 days at 65 just no enough. Didn’t pick it up at legging, seemed fresh and great then. Either I’m somewhat blind or have a secondary pedo infection that crushed the batch. Pulled keg from fridge, bringing up to kitchen to keep warm. Will retest after 2 weeks, if not gone may try fresh yeast. Really concerned this is an infection thing. |
