very good fermentation taking place. Lots of activity in the blow off tube and the krausen has even entered the blow off tube. Too late for fermcap. |

15 February 2023, 1735 – took sample. 1.017 at 72 degrees. Turned off the heat wrap. Taste is good. I get the Belgian yeast taste. Not bitter. |

16-28 February 2023 – cold crashed in the house at 52 degrees as I was gone to Germany.
28 February 2023, 0630 – took sample. 1.017 at 68 degrees after warming. I racked this into the big mouth carboy for dry hopping later on. Moved into cellar. Was about 5.5 gallons or more in the carboy when I racked. I am pretty sure the Big Mouth holds more than 5 gallons as I still have head space. |

1 May 2023, 2100 – I decided to keg tonight as I am going up to the cabin for a few days. Robert agreed and said if I didn’t it could start to get grassy. Hops were on top until I moved the carboy and then they started to sink. I was going to use the floating dip tube, but the transfer was pretty clean. I will probably have a glass or two that is chunky. Taste is good. It is hoppy, but not real bitter. I had about 500 ml of sludge left, subtract 100 ml for the 4 ounces of hops means 400 ml. I had 20.3 liters in the fermenter, so 19.9 liters kegged. The big mouth bubbler was very easy to clean. |

I put a black liquid end on a gas line with the quick disconnect and forced air down into the keg. Eventually I heard it pop and it got unstuck, but it kept getting clogged when I went to pour it. I tried hooking up the floating dip tube, but the small gas line has to be hooked up from inside and I would have gotten beer all over me and my hands in the beer, so I hooked up the floating dip tube to a new keg and sanitized the keg. I was going to do a closed transfer, but I know it would not work if it would not pour, so I had to use my regular gravity transfer into the new keg with the floating dip tube. It was partially carbonated so I got about a half a keg transferred and then had a foam over. I put the original keg in the keezer and the other one in the refrigerator. It poured great, but is not carbonated enough, so I put it at 30 PSI. It tastes good. |

I took the rest of the first keg and poured it into the one with the floating dip tube. It was a little messy as it foamed over the top. I used a strainer, but cut it off before a lot of hops came out. |
