Calibrated pH meter before using it - it appeared to show 7.0 buffer as 7.2 at first - Once again hit my pH target although I had set it low in an attempt to hit 5.4 - so maybe I have the pH working better |

Initially pH read 5.4 but dropped to 5.3 (temp of sample = 70F) / 15.7 BrixWRI - using strike water volume - actual volume was 4.4 gal with malt pipe still dripping |

Dropped pH slightly to 5.2 but ok - 16.3 BrixWRI - volume slightly low even after adding water and trying for 5.5 gal - measurement system is not precise - hit calculated pre-boil gravity! |

17.8 BrixWRI - a little under expected OG but still well within the style. pH went up but the sample have hop residue in it and may have impacted reading - met calculated volume (not sure how pre-boil SG was dead-on and final volume was dead on but OG is not (???) |

While away in Atlanta, we had a warm-up and the garage temperature slowly crept up to my chagrin. Once I returned, I placed the fermenter in the insulated bag and placed a frozen gallon water jug to try to gently reduce the temperature back to the middle of the 48-55F recommended range. The heat wrap is still attached in case the temperature drops too low. |

Modified Home Assistant to correct the RAPT Pill temperature which I measured to be 3.6F too low based on the Pill sitting in sanitizer waiting to be deployed and measuring the sanitizer temperature using my grill thermometer |

I vigorously roused the yeast some more since it seemed effective last time. This time, gravity jumped up. If it does not jump back down, I will assume some debris or such is on top of the RAPT Pill. If so, I will try rousing again. |

roused keg again to see if gravity would change and it did - still not sure if need to open and clean off the RAPT Pill |

Remove RAPT Pill and washed off the accumulated hop debris and returned to keg - rousing probably pushed this on to the pill |

My very first lager and it turned out great! I have three versions with different post fermentation salts added to two of them and one left alone. They all have cleared nicely and have a very caramel forward aroma and taste. Also dried dark fruits and cherries in taste. Carbonation at around 2.3 volumes seems good but head is a bit more fleeting than would have liked. |

awesome! malt flavors of caramel and dried cherry - finishes mostly dry - definitely not cloying - just a touch of bitterness - pH sample NOT degassed - pH seems high for a finished beer |
