Due to excess pre boil volume, and lower than expected pre boil gravity, I elected to extend the boil an extra 15 minutes, but kept the hops schedule to the original 60 minute design. From the start of the boil, it was vigorous, until I turned down the heat and lessened boil intensity with about 20 minutes remaining. There was a lot of gunk left in the kettle, some of which made its way into the fermenter. |

Got a full case out of what I expected to be too little volume. Beer had good clarity, aroma and flavor. Carbed with table sugar (1.70 ounces) boiled in water, targeting 2.4 volumes CO2 in finished beer. The yeast cake was nicely compacted, with lots of fresh white yeast evident, so collected a jar full of slurry. |
