My son wanted my "take" on Mex Lager. I never brewed a Lager because of the complexities of the lagering process and the low temp fermentation. I read that Diamond Lager works well enough at 60...so I guess I'll give that a go and make a pseudo Mex lager.

I made my recipe basic observations...Mex lagers tend to be a 50/50 blend of Pils and 2 row or German malts. They tend to have a little corn. I added a little dextrine to add mouthfeel since I like beers with a little body. I used Crystal because I have a ton of it and a little german hops (Saaz) in the aroma. I wanted to do a pressure fermentation, but that would be really hard with only a corny keg as a fermentation vessel.

If you buy Mexican Lager in the store - they cost 13.99 for 12 or 1.17 per "can" - this costs you .47 per "can". Eating well and drinking well - FOR WAY LESS.
