Taking grain temp and calculating strike water amount and temp.
For 6.9 lbs of grain at 76F for 1.5 qt/lbs thickness, that’s 8.6 quarts or 8.1 liters at 160F. |

Mashed in. Hit 150 right on. It’s a pretty cold day so since I’m mashing in the kettle I’m planning on checking every 5 min if I need to give it a warm up.
I’m also pouring out sparge water inside today. Somebody came by and disconnected the outside water. I don’t think anyone gave any notice about that. |

The mash temp dropped to 145 in around 5 min. Raised it back up to 152. |

Totally forgot the first wort runnings hops. Will add them first thing as I start to hear up the wort. The wort has been chilling out there while we had dinner. Now back to it. |

The hop rest is turning out to be pretty awkward. I had to bring the kettle in to the basement to chill it just a little, then stash the chiller in a sanitized small kettle and bring the boil kettle back out so I can keep the temp up at 185 periodically.
It's cold and dark and I'm ready to be done. I'm going to have to push birdy bedtimes back a half hour it looks like to get it all done. |

I ended up using Imperial yeast’s 200 billion cell cold pack. The strain to use is called “Barbarian” by their branding. The guy at the Homebrew store told me this was the same strain as the Vermont yeast I was looking for. I saved off a small amount of yeast in a jar because 200 billion is like 4 times as much yeast as I needed to ferment the half batch. Not sure what, if anything, I’m going to do with the saved yeast. |

I ended up leaving the majority of the cleaning to the next day. I cleaned out the hop bags, but that’s it. That ended up working out okay because I got up a few hours before Kate and so I took my time and mixed up some new PBW and gave everything a pretty good going over. It’s clear I need to use PBW every time on certain components. The boil kettle and the chiller, specifically.
I’m also debating how to go about the dry hopping. I’m debating between putting the pellets in not in a mesh bag but then trying to filter them out when racking into the bottling bucket, or using a wider mouth fermenter for a secondary so I can put them in using a mesh bag. Probably the later would be better. |

I racked to a 3 gallon Fermonster with a dry hop attachment to the mouth. I racked the beer into the net bag with the hops, to hopefully give all of the beer some filteration through the hops to start out with. |

Appearance

Large off-white head, long lasting. Seems like it may be slightly over carbonated because it foams up quite a bit in a glass. It’s opaque but the color is somewhere between golden and brown.
Aroma
===
Citrus, resin.
Taste
===
Tangy, with a touch of biscuit in the finish. Sharp bitter bite up front. Sort of lemon and dry. Pleasantly creamy mouthfeel. Leaves a bright herbal taste in your mouth.
Overall
===
It’s clearly an IPA, but it’s difficult to pick out specific hope notes. There is bitterness and a general aroma of hoppiness but it doesn’t resolve to any delicate flavors or aromas like I would like. It makes me wonder about various things that happened that could have destroyed the volatile aromatics. For example, I stored it warm during carbonation and even after it had finished carbonating. Also, I’m unsure about how well I did in trying to minimize oxidation. Still, it’s pleasant and drinkable. |
