-BIAB water retention is 0.0625 gal/lb. Start with 4.65 gal water
-Mash normally, 152F for 60-75 minutes
-Boil for 70 minutes following the hops schedule
-Slowly add the Belgian Candy Sugar with 5 min left in boil
-Ferment starting low (62F) and raise 1F each day after fermentation starts for 2-3 weeks. Seems like this will encourage clean fermentation and release of ideal flavors, plus ferment all available sugars.
-high carbonation, if kegging go to 3.5-4 vols. If bottling, go to the limit (3 vols is spec limit)
This benefits from lager-style aging, but can be consumed immediately. Age for 12-16 weeks for best results per forums.
Brewed July 2022: OG was spot on, FG went all the way down to 1.001 for nearly 12% beer. Opened one after 3 days in the fridge - prominent alcohol taste, very fruity, not as dry as I hoped. It is certainly bright, strong, bold, fruity. Should also have spice notes.
