Gravity slightly lower than expected, yeast was rehydrated and pitched at 80* F. Hydrometer reading taken at 90* F due to time constraints (1.048) and was adjusted for temp. Vigorous fermentation observed the next morning. Current plan is 7-10 days primary, 2 weeks secondary. |

End of primary fermentation. Transferred via auto siphon into another 5 gal bucket for 2 week secondary ferment. |

Racked into 12 oz. bottles. 1 carbonation tablet used per bottle. Bottles placed in boxes in 60-65 *F room to carbonate. |

Beer was not fully carbonated at this time (friend's wedding). It was still very smooth, malty, and almost no hops/bitterness taste. Strong biscuit taste, a tiny bit too much in my opinion, giving a slightly stale bread initial taste that does not last long. Will try again in a few weeks to check carbonation. Color came out beautiful, a dark brown/mahogany in a clear glass, and was not nearly as heavy on the mouth as it looked. |

Opened a few more, and now fully carbonated with good head retention. Slight stale taste still present, but diminished with time. It seems the carbonation tablets need more time to carbonate, but did so. Very nice for my second homebrew, I would reduce Caracrystal malt to 12 oz, and perhaps the honey malt to 4 oz. I think this recipe would be best improved by doing a full grain mash instead of extract. |
