Chilled to 90 deg. F.
Added 10 mL lactic acid (88%) to drop pH
pH: 5.0
Added 7mL more to drop pH
pH: 4.6
Added 5 capsules of GoodBelly lactobacillus (10 billions cells per capsules).
Kettle was put in the the small deep freezer with temp control set to 90 deg. 40W carboy heater was put around the kettle and the freezer plugged into the cooling side of the temp control.
~30 hrs. to drop to 3.5 pH.
Surprisingly, gravity seemed to have dropped from 1.031 to 1.028, but maybe temperature was the veriable. |

Taste seemed not as good as the previous batch and seemed much cloudier. Despite being 1.006, it tasted maybe not finished yet. Many factors in play, but maybe the previous White Labs WLP029 is a better choice. |

Pulled sample after sitting on berries for 16 days.
Tastes very nice, but I’ll leave it on the berries for a couple more weeks to absorb more flavor.
Subtle berry flavor and a nice bitterness think from the blackberries. Looking forward to this one. |
