After ~31 hours there were zero signs of fermentation. No krausen, no airlock, not even any slight bubbles in the wort. I opened another pack of Nectar and sprinkled on top of wort. This may have been a bad pack because when I opened the original pack the smell was different than most dry yeast. Not very yeasty/bready but I remember it reminded me of the racket ball court at First Baptist. The second pack I opened smelled more right; yeasty and bready. Hopefully it will take off soon and use all that dead yeast as nutrients? |

Probably just past high krausen. Too tired last night. Starsan'ed muslin bag and spoon with floss tied on to pull out in 3 days.
1 oz Amarillo Cryo (Lupulin Pellet) for 3 days
1 oz Loral LupuLN2 (Cryo) (Lupulin Pellet) for 3 days
1 oz 2019 Pink Boots Blend (Pellet) for 3 days

Pulled krausen hops out. Let them drip against side of fermentor a little. Bag smelled amazing, looked like just the non-cryo were left in it. |

1 oz Amarillo Cryo (Lupulin Pellet) for 3 days
1 oz 2019 Pink Boots Blend (Pellet) for 3 days
Took a sample before dry hopping. Tasted fantastic! Very juicy and fruity. Almost a hint of a hop bite so I decided to take out the ounce of loral from this dry hop. Hopefully will be good.

1.0125 FG. Sample smelled really good. I thought I started catching a little bit of the Verdant yeast type smell, but then decided it wasn't there. Smell and taste were really spot on. So juicy with a nice mouthfeel. Great hop characteristics with just a hint of hop bite. Not too concerned with that since there were visible hop particles from the dry hop. Pretty excited about the beer, hopefully not much will change when it's cold and carbonated. |

Put into 3 gallon keg (previously KBS-ish stout, thought I was going to have to dump some but we had kicked it). There was so leakage from the beer out post. Ordered new post o-rings because it seemed to be coming from there. Cleaned keg and lines well with Oxy+TSP90. Didn't see any defects in o-ring and didn't have any new ones so just left it.
Had right at 3 gallons to package. Covered gas dip tube by about 1 cm. Added a little less than 1/2 campden crushed to bottom of keg before transferring. Purged 6 times at 42 psi and left overnight at 42 psi. |

OMG so good! Like REALLY good. Very reminiscent of some of the better Monday night 2xNEIPA special releases and better than many of them. Aroma and flavor are super hoppy with fruit and a hint of tropical but also a great balancing floral (Loral) and more classical (probably Amarillo and Loral) aspect as well. No hop burn or vegetal flavors. No yeasty or estery off flavors at all. Appearance is pale to golden and very hazy. Not super thick hazy but definitely can't see my hand through it when held up to light. So freaking good I have been drinking it exclusively since I tapped the keg at the beginning of the week. I'm interested to try more fruity and tropical type hops with this recipe. Not sure what yeast Nectar compares to, but it's definitely got my approval for now. |
