Notes

Steep tea, lemon juice and zest for 5-8 min in 2 c boiling water.

Put honey and tea into jug and shake like crazy to mix. Add cold water to bring temp to below 80.

Pitch yeast and nutrient and oxygenate for 30 sec.

Oxygenate again on second day of fermentation. Ferment for 10+ days. The yeast is slow. Keep checking SG until it stops dropping.

Prime and bottle and drink after about 5 days.

This provides dominant lemon flavor. Use more teabags to get more tea flavor.
