Kept fermentation temp round 65-70 by placing the 1 gallon carboys around an ice-wand, and cycling the ice wands out about every 24 hrs for the first 3 days. As of Tuesday, the fermentations had slowed down significantly, so I am letting them free rise to ambient, having kept them cold through the first few days. All fermentations were started with starters, so they started fermentation within a few hours of pitching. Given that, I put the ice on them the first night to keep the exothermic stage from kicking them into the 80s. |
