Wow, what a session. Phoebe was going nuts, I had to clean a ton of shit from last time and I probably shouldn't have brewed, but wanted to.
Things still went fairly smoothly, though I shifted a few elements of the recipe around and only spilled a few cups of wort on the floor.
This one should be interesting -- the wort is like syrup, but it already tastes good. Probably should have pitched two packets of US-05, but I didn't have another.

USE A BLOWOFF VALVE NEXT TIME! This fucker blew the stop valve, made a mess, and is still going crazy 12 hours after adding the blowoff valve.
Not sure what I was thinking when I didn't use one...
Fermentation temp has risen to about 74. Not sure if it's the activity of the fermentation or that it's gotten warmer here now that it's Spring, but wanted to note that. Still going STRONG.

Put airlock back on. Figured I'd take a reading. Still have some days to go to hit 25. Very hoppy and sharp boozy taste -- this will smooth out in conditioning. Tastes promising. |

Racked to secondary (6.5 gallon plastic bottling bucket) and dry hopped. Gonna wait 7 days and bottle. Tastes chewy, but good. The hops will only add goodness. |

Just bottled 46 bottles. A bit light, but I think the dry hopping ate a bunch of it. Specific gravity stands at 1.014; a damn heavy 9.2% beer. Smells good. We'll see in two weeks or so. |

I like this beer, but it's a chore to make and it never really fully carbonated, so an accurate assessment is difficult. These also went pretty fast -- I was proud to give an IIPA to friends and they're a nice dinner beer. Flavor was a little on the sweet side due to not maturing properly -- next time give it 6 weeks to carb before even trying it. I also think since I only pitched one packet of yeast that it never really carbonated since there was no yeast left -- next time I should use two for sure, or at least add some yeast when botling.
Interesting experiment and should try again in the fall.
Rating: 7.5 out of 10 (though tough to tell whether it would have been a lot better had it carbed fully.) |
