Notes

Add amyloglucosidase to mash to fully hydrolyse starches into fermentable sugars. Aim for a dry finish of 1.005 approx.

Fermenting out of Unitank at 12psi post yeast growth phase (blow off cane open for first 48 hours).

Dry hop 200g Rakau and 150g Amarillo cryo after initial yeast growth phase, approx day 3 post pitch. Repressurise once dry hops in fermenter, back up to 15psi.

Once ferment finished, cold crash to 3 Celsius and attach CO2 line and gas to 2.5-2.8 volumes, set to 15 psi.

Keg after 3 more days at cold crash temp, pressurised transfer.
